My $0.02 ... Grizzly has some advantages over Jetty, but the connector is less well-exercised. I choose Jetty for its stability balanced with very good performance. Load Impact was not able to measure any consistent external differences between a Restlet site hosted on both connectors, although over the local network I could observe a slight performance boost by using Grizzly.
I have high hopes for the new Restlet M7 internal connector to actually become the fastest and most scalable Restlet delivery solution -- initial benchmarks are promising -- but it's still a baby, even more so than the Grizzly connector.
