For column headers, we put little up or down arrow images to tell which

Check the examples. DisplayTags specifies CSS-classes for the sortable, <TH>-Elements, those that actually are sorted, and those that are sorted ascending or descending. By adding CSS-Styling specific to those classes either in a separate external stylesheet or in the HTML itself you can render them differently.
You arrows would be implemented by adding a background-image-style to th.sortable, th.order1 and th.order2.

page set. How can I make display tag look like this?
The file displaytag.properties specifies the texts and layout to use for the pagination. You can easily change the strings "first", "prev", "next" and "last" to whatever suits you.
