Don't know about setting cc directly but you can use mod, breath
control, aftertouch and pitchbend as continuous controllers. These are
assigned in the cords section.

I find pitchbend the best as this has a much higher resolution for
smoother control.

The emu manual really didn't go into enough detail. They seem to skip
over the finer points of the cords section.
