The breakdown or drop, is all about the tension and the release (but there's no rules). The best thing you can do is study how other producers do it and then work on your own method. I don't think you work with keyboards do you? Personally I would find making music way too restrictive if I couldn't use a keyboard. Even if you can't play, they're useful for creating little melodies and b-lines.
