To use the sampler on things other than drum hits, you should go to the intstrument (INS) tab and click on the little orange light in top left (I can't remember its label). Now, tweak the decay, attack, release, etc to suit how you want the sample to be played back. After you do this, the piano roll will playback at the length you set it at. By default, the sampler is configured for playing drums hits, not instruments. Lemme know if I'm not being clear.
IMO, the main disadvantage to fruityloops is its playlist. Its just blocks, automation is possible, but completely unintuitive. Im starting to just build loops in fruityloops and then runnin it as a vsti in cubase for proper sequencing and automation.

its built in sampler is pretty crap too. if you are using it in piano roll mode, it will ignore the length of the note you draw in, i've had big problems with writing complex subbass lines where the tail of one note is still playing when i trigger the next note, which causes nasty, muddy interference. if i'm not using hte piano roll, i can just turn on "cut itself" and then two sub bass notese will not overlap, but this doesnt work in piano roll mode. there are lots of the kinds problems that seem small at first but can really screw you in the end.
all that said, i still do use fruity almost exclusively as my sequncer these days... i just need to find the energy to learn cubase sx :)
