It is possible to add and remove headers, but not modify them in a way that could be used to obscure e-mail addresses.
You can use filters to enforce that e-mail addresses aren't valid by using regular expressions, and rejecting any post that contains a valid e-mail address.
I have already replied to your question directed to support, but it has not yet been delivered. You should change your MX records to a host with an A record, not a CNAME as some mail servers will not be able to deliver mail to you with that configuration.
