telnet or ssh localhost | tee log_file is useful for demonstrations.

Test this
 open two or more xterms (or similar), same size

 term 1: ssh localhost | tail trace

 term 2 and up: tail -f trace

and start working in term 1 (nothing graphical), eg emacs -nw
