Yes I installed it on my 1G/26G VPS (https://meet.rrq.id.au), running jitsi with its web interface proxied through nginx. Very straight-forward to install (apt-get install), though I needed to reduce its -Xmx from 3G to 1G.
Basically: you set up the domain; set up nginx SSL; install jitsi and follow the prompts. I suppose, if you want to use jitsi's jetty web server directly, then the SSL step is slightly different.
