You can split a disk so you can put documents on one partition and
system files on another if you so wish.
If you insist on using 2, you should be able to specify the second
disk (sdb) as /home on install of UBuntu.
For revision control I'd use Subversion or Git (there are many GUI
front-ends, if you want).
