With v1.1 you could use expire plugin. http://wiki.dovecot.org/Plugins/Expire

Are you sure the slowdown is because of deleting messages? The syncing after that should be about instantaneous even for huge mailboxes. Or could the problem be for example that the messages' headers (etc) just haven't been indexed for the mailbox and it takes a while to do that when the mailbox is opened?
