What is the content of your /etc/postfix/transport? "virtual_transport = virtual" let Postfix deliver your mails to the mail store. You have to use Dovecot's LMTP <http://master.wiki2.dovecot.org/HowTo/PostfixDovecotLMTP> or Dovecot's LDA <http://master.wiki2.dovecot.org/LDA/Postfix> in order to apply Sieve rules on mail delivery.
