my thunderbird's users connect to our server.
Is there a function in Dovecot to do so ?
You may use the postlogin feature:

Haven't used it myself yet and don't know if this works as expected.

The NO response indicates an operational error message from the
server. When tagged, it indicates unsuccessful completion of the
associated command. The untagged form indicates a warning; the
command can still complete successfully. The human-readable text
describes the condition.
