What's so un-appealing about building from source? It's then perfectly matched to your system.

Admittedly I can build kernels faster than latest dovecot's, but that's just the "make time"

./configure --prefix=/usr --sysconfdir=/etc --localstatedir=/var --with-mysql --without-pam --without-shadow --without-bsdauth is done in seconds...

Nothing at all hard about that.
