This is a bit unfortunate behavior, which we didn't catch in our tests. I'll
see if I can fix it.
For now you can use the longer version ldap_iterate_fields or
userdb_ldap_iterate_fields instead. It shows up in a bit weird way in the
doveconf output, which I'll also try to figure out how to fix:

userdb_ldap {
iterate_fields {
user = %{ldap:uid}
}
}
}
