I'd like to be able to do this as well.
I found an e-mail message from Kim Shepherd that mentions the command line
harvester. It's here:

According to this message, it looks like there's a --once option for the
command line version of the harvester. Maybe you could use the command line
harvester and the various options with your system scheduler ( cron ?) to setup
different harvesting schedules for different collections.
