You're right, I'm seeing String#getBytes() in over 40 different places.
Instead of hardcoding "UTF-8" in there every time, shouldn't we have it as a
config parameter? I can't think of any particular case why we would want to
change this in the future, but avoiding the need to propagate a change in +40
places seems sensible.
