Somehow I did not see this email come through, but in Googling around for a possible answer to my problem, I happened to see that somebody actually did respond to this email I sent last week.
Thank you, Gabrielle! UTF-8 was set in server.xml for port 8080 but not for 8443. I just added it for 8443 and it worked like a charm!
