the complete backup procedure is described here:

To restore the database, just execute the sql file.

There are also other ways how you can take backup of your DSpace
contents (this includes hierarchy, items and bitstreams; doesn't
include configuration and customizations), recommended is AIP backup.
It is also the easiest for migration of content from one instance to
another:
