Several years ago I tried this with the MkLinux distribution, and was able to get partway through the boot process, but no further. I checked carefully, and there were no other distributions that did not specifically exclude the Duo 2300.
I found that NetBSD is available for pre-PPC Duos, but I forget which models. The report of Yellow Dog running on a 2300 is interesting. A peek at their site does not hint at this support. Good Luck!
