The 4.3 gig hard drive is definitely worth it.  Right now it seems like it isn't 
possible to get the 320 MHz copper G3 upgrade (although computability.com has one in 
stock for $899).  

The best place to have it done would be MCE (Mac Components Engineered, at 
www.powerbook1.com).
