Two words: disk images.

I play Railroad Tycoon this way.  I think a much bigger issue than 
the lack of a CD-ROM drive is finding games that can be played with a 
trackpad.  RTII performs extremely well in this regard--you don't 
ever need to mouse and rarely need to type to run it.
