Implement and make available xgit-status-reset-mixed.
That's more or less the complementary of xgit-status-add-u, it's
available from the same menu.

Implement xgit-status-add-u and make it available in diff-mode.
dvc-diff-mode can now be overridden, the appropriate functions in
dvc-diff.el do the `dvc-function' to get the overridden mode, if
necessary.
Also, a few other code cleanups.
