Public bug reported:

A possibility to change the name of a server would be nice. Currently it's 
based on the Name attribute of a .desktop file, but this is often used as a 
menu entry.
E.g. for a GMail Notifier this will be "GMail Notifier", but in the indicator 
applet "GMail" would make much more sense.

A solution can be adding a new identifier to the .desktop files like "X
-Indicator-Name", containing the name that should be used in the applet.
