I have stumbled into this problem quite a few times myself. I use the following "trick": instead of trying to delete the old QSL mgr (which obviously doe not work) I put one single dot in the QSL mgr field and save the info.
Next time you try to log the same station only the single dot appears as QSL mgr.... Maybe there are more tricks, but this one as simple and you can not be fooled again next time with the wrong Mgr-info. good luck !
