Align hibernate version

JBoss AS 5.1 uses hibernate 3.3.1.GA and JBoss EAP uses hibernate 3.3.2.GA
JBoss 4 Nuxeo build was run against a older version of hibernate.
We need to :
- align build on 3.3.1.GA and align on the needed API changes
- wrap the changes between 3.3.1 and 3.3.2 so that we can run on both EAP and
AS 5.1
