I'm guessing that the inner pot could well have an interior glaze. I 
have traditional butter dishes and milk coolers here in Ireland that 
are terra cotta with an interior glaze. One stood them in a saucer of 
water and draped muslin over so that both pot and muslin wicked up 
the water - they work pretty well but of course Ireland is much 
cooler than a continental climate in summer. Adding a fan ought to 
work but it makes it a much more complicated and expensive piece of 
technology to build.
I'll be interested to hear how the fridge and freezer experiment works out
