The easiest mapping is to output a delimited file - comma, pipe,
whatever you feel good about and isn't present in the data.  Excel and
Access will import them with no problem.  You can also give Excel and
Access hints about the data by surrounding the text data with quotes and
inserting the decimal points into numerics.  You can also send a
fixed-length formatted flat file, but you'll have to do some extra work
to import.

(Hopefully your mapper will cooperate.)
