Since I had a passing interest and it was lunch time, I talked to a very unhelpful person at GXS about it and finally found out how they expect it to be done. Basically any elements you cannot provide have to be set to optional in the map so it maps successfully and then you have to move the documents to incomplete either manually or using a script. Then you can open and complete them. Sounds like a nightmare to me.
