If you want to go further back, and explore some fascinating stuff, try

Franklin, J. (2001) The science of conjecture: Evidence and probablity
before Pascal John Hopkins UP Baltimore

Coming forward a little bit in time, and getting more statistical

Porter, TM (1986). The rise of statistical thinking 1820-1900.
Princeton UP, Princeton NJ

Covering the same period, but differently, is

Stigler, SM (1986). The history of statistics: The measure of
uncertainty before 1900 Harvard UP, Cambridge MA

for the 20th century there's

Salsburg, D (2002) The lady tasting tea: How statistics revolutionized
science in the 20th century Owl Books

that should get you going!

None of these books are very mathematical (Stigler is the most so).

Has anyone run across a good book on the history of statistics. I just

finished Statistics as Principled Argument and now I would like to
trace
the thought processes back in time.
