Hi Roos, 1. overview of all courses available for review by not-logged-in user is a default behavior of Open edX. 2. customized menu with drop-downs - this is essentially a customized theme. You can do this yourself if you're familiar with HTML, CSS and maco-templates. The starting point should be here: https://github.com/edx/edx-platform/tree/master/themes 3. carousel - same thing. Open edX doesn't have it, so one need to customize the default template to have it on the site.
IndonesiaX did it exatly this way - they've customized the Open edX theme to add their custom features like drop-down menus. P.S.: we can help setting similar features for you.
