Hello all! for anyone interested, i created some supplemental documentation <https://blog.lawrencemcdaniel.com/open-edx-ecommerce/> for setting up Ecommerce on Ginkgo which goes as far as getting the Oscar Ecommerce dashboard / admin console up on your screen. if there's continued interest then i could ostensibly continue documenting up thru product setup and PayPal integration.
