I use KVM now but I still have my conf files. Here was my 2.1 file

[EMAIL PROTECTED] xen]$ cat Endian_21
name = "Endian_21"
builder = "hvm"
memory = "384"
disk = [ 'file:/home/mgt/Virtuals/Endian_21,hda,w', ]
vif = [ 'type=ioemu, mac=00:16:3e:0b:38:8f, bridge=xenbr0', 'type=ioemu,
mac=00:16:3e:0b:39:8f, bridge=xenbr1' ]
uuid = "83caa76e-275f-02ee-47cb-6563577cdc43"
device_model = "/usr/lib64/xen/bin/qemu-dm"
kernel = "/usr/lib/xen/boot/hvmloader"
vnc=1
vncunused=1
apic=1
acpi=1
pae=1

vcpus=2
serial = "pty" # enable serial console
on_reboot   = 'restart'
on_crash    = 'restart'

I sem to remember hacking the network-bridge script to make a
dual-network-bridge pretty sure the info was on the xen maillist.

PS - Endian is based on RHEL4/Centos4 if that helps
