Do I need to add any old header files to my build environment so that these
preprocessor symbols can be resolved?

Are there any chances to complete the version information in the involved
configuration checks?

Those symbols are supposed to come from ffmpeg.

I suggest you stick to some simple "./configure --prefix=/usr" (nothing more) if you're not able to cope with problems when you add more configure options.
