The missing Meta key is a common problem for any Emacs on OS X. In Aquamacs Emacs, we have a functionality called "Emulate Language Keyboard Mode". This will allow you to use Option for Meta, and insert commonly used characters with Option as well. With a bit of Emacs hackery, you could get that to work in Emacs.app as well. You can get the code with Aquamacs (in the .app bundle), or via the web CVS.
