I 've put the PATH variable in ~/.MacOSX/environment.plist instead of  
~/.profile, and now Emacs.app sees the PATH variable.

Just one thing more I 'd like to ask: in the TeX commands that you  
wrote me, it seems that the plain "XeLaTeX" command (the one without  
"output-driver" option) uses the xdvipdfmx driver. If I'm not mistaken  
xelatex without an output-driver option uses by default the xdv2pdf  
driver. No?
