Wordsmith the documentation re *-thing functions (#111)
* Wordsmith the documentation re *-thing functions
I had a hard time understanding the documentation for the thing
functions. Turns out that the *biggest* reason is that there a
function and a customization variable share the same name:
`anzu-replace-at-cursor-thing`.
Also wordsmithed various other related bits.
