We do have two models already.
We have some small bits documented in
https://orgmode.org/worg/org-contrib/babel/languages/index.html

Generally, the defaults are implemented in ob-core.el.
Session API is in ob-comint.el. Shell command API is in ob-eval.el.

I am sorry, but I do not fully understand what you are talking about.
Which defaults are you referring to?
