Org markup is recognized in the title.
And test_latex_fragments is a bunch of subscript markup, so you see what
you see.

You can use #+options: ^:nil to disable implicit sub/superscripts during
export.
This way, only text_{latex} will be interpreted as subscript, but not
text_latex (across the whole document, not just in title).
