There are two things here where I'd need input from a real expert:
1.- I'm planning to add the lang=AUTO equivalent of babel/polyglossia to
LATEX_DOC_METADATA. Would that be helpful?
2.- For completely divergent Org language codes, I plan to introduce a
:BCP47 property to org-latex-language-alist. I know that DocumentMetadata
accepts two letter and two+two letter codes:
"en" is OK for American English, whereas "en-GB" means British English.
These can be derived from the language name ("en-gb" is easy to translate.
