Show all: M-x show-all RET Show overview: M-x org-overview RET C-u S-TAB will switch back to the startup display status. If you want blocks to be displayed when unfolding everything in the buffer, either you create a custom command that combines `show-all' and `org-show-block-all', or you simply rely on `org-cycle' (using TAB) and add `org-show-block-all' to `org-cycle-hook'.
