I investigated this. The commands that toggle default values, such as toggle-case-fold-search, fail to make this clear in their doc strings. Would someone please fix those doc strings?
There is already a menu item Truncate Long Lines in this Buffer. (Its doc string doesn't make clear that it applies only to the current buffer.)
