Well, first, this sounds like YAGP (Yet Another Good Plugin).

And having said that, second, I tend to be against modifying data in
other apps without explicit user instruction. I think a lot of users
will get confused if addresses are appearing and disappearing in the
Address Book.

Now, in Letters.app's own addresses-that-were-emailed list, I could
see some utility for auto add/remove of addresses. Of course, there's
the little matter that it has to store _all_ email addresses
_somewhere_ so it can count how recently/frequently they're emailed.

I'll also add my own (tangental) wish: that email address
auto-complete not be based on alphabetical order. Either list them
using MRU, or else some little formula that weighs more recent and
most frequently used addresses.
