Two reasons:  

One is for a back up copy of work related email and attachments.  I leave 
my messages on the server for 5 days, by which time I either have a back 
up or no longer needed it.

When I complete a project, I run the Forward as Digest applescript and 
save that as text for documentation.  It captures all incoming mail in 
the folder, but not outgoing mail (even when sent mail is moved to the 
project folder).  With the bcc I get my outgoing messages included.
