I can happily report that I was able to recently use SheepShaver to replace my OS 9 based work machine. It worked just fine, and appeared to be quite stable. This was with a full blown OS 9 install, not a stripped version like I had previously tested running just Emailer with. This includes various extensions and other junk, and it ran all the software I needed it to run (which I admit, wasn't my full library of software, I was specifically after a few apps that were OS 9 only, and my iMac with Classic is acting as a temporary server at another location, so I couldn't just run the software on it as I normally would have).
The only complaint I had was the GUI was a little sluggish. Application performance was great, blazing fast... but actually interacting with the apps was a tad slow. I had to concentrate on typing slower as I would easily get way ahead of the application if I typed at full speed (and even trying to type slower, I had regular problems where I had to back up and retype things because it missed a keystroke or two).
But on a whole, I was surprised at exactly how usable it really did turn out to be. It was usable enough that it was actually EASIER to use than to use my real OS 9 based work computer (which is currently running on the floor next to me, but I'm out of table space for the keyboard and mouse, so the keyboard is resting on top of the monitor, which is on top of the tower, and the mouse is using the bit of space on the top of the tower next to the monitor... not an ideal setup for doing data entry which is what I was trying to do).
So there is hope for you "ol' stick in the muds" that refuse to embrace the future :-)
