Assuming you mean "editing the message Subject line in Apple Mail" I can tell you that this is easy (if tedious) and you'll kick yourself because
it's so obvious. :-)

Drag the message from your Inbox to your Drafts folder.
Open the message, edit the Subject line and close the message.
Click OK to save it.
Drag it to wherever you want it.

The drawback (apart from unnecessary steps) is that the date changes to
the current date. So do it as soon as you receive a message.

It also changes who the email is from, which would seem to render this trick useless. But then, since I don't do this anyway, maybe those that do don't mind the From changing.
