Hi Neville: I don't think you can retreive mail that has been emptied from the Deleted folder , but you can change the preference so that the Deleted folder isn't emptied when you quit CE.
Go to SetUp>Prefs>Files and Folders and change it to the scenario of your choosing. I have mine set to empty the folder only of mail older than a specified number of days.
