Entourage does import signatures.
There was a problem in that it imported my mail in "locked" folders,
that I could not rearrange. I finally deleted something that made it
work, but not sure what.
I only use Entourage for one account, but it has successfully
archived the old emailer mail.
Note: I am using Mailsmith currently. Its adequate, lets me avoid
html email completely, but is not perfect. The next major release
addresses most of my problems, so I am looking forward to it. I can
recommend it to emailer users.
(It also successfully imported emailer mail, signatures, etc.,
although with my huge mail database it took a couple tries before it
was successful.)
