Take all of the parts of 60068-2-x and put them together and you will have something very similar to MIL-STD-810. 60068 does not define test levels for specific applications, only the test methods.
60721 has been around a long while, but does not seem to be in particularly common usage. It enables you to define an environment for virtually all points in a product's lifecycle/mission profile, and consequently to define the test levels that will enable you to verify performance for that mission profile. Having done that, you can go to 60068 for the test methods.
