The limit of 8 is written into the current parport driver. hal_parport.c
says
 
"/** This file, 'hal_parport.c', is a HAL component that provides a
    driver for the standard PC parallel port.

    It supports up to eight parallel ports, and if the port hardware
    is bidirectional, the eight data bits can be configured as inputs
    or outputs."

This limit will permit 136 pins.  I don't know how much of an issue
expanding it to 32 or 64 might be but I suspect it could be done if we
needed more.

There does come a point where the cost of extra parport cards becomes
more expensive that a mesa or similar card with many more pins than a
parport.  I don't see a reference to how many mesa cards can be used but
it would not take many of them to provide a lot of hard wired IO.
