You may need to edit the resolution settings in /etc/X11/xorg.conf to match your monitor. I seem to recall using the vesa driver for all of my i810 PC's. There are a number of tricks to set up a video driver and monitor for Ubuntu, such as Control + Alt + F1 to switch from your garbled screen to a text terminal screen with a command line; and Control + Alt + Backspace to reset the graphics screen and reload xorg.conf.
